By removing the coffee, you’re letting the Theobromine in the GAYA cacao do the heavy lifting. Theobromine is a vasodilator, meaning it helps your blood flow rather than just amping up your heart rate.
Ingredients:
- 4 tbsp GAYA
- 300ml Hot water
- 500g Mascarpone
- 300ml Heavy cream
- 80g White or coconut sugar
- 4 Egg yolks
- 1 Pack of Ladyfingers
Instructions:
- Mix 4 tbsp of GAYA and 300ml hot water in a bowl. Whisk or use a frother until dissolved and then set it aside to cool down
- Whisk 4 egg yolks and 80g of sugar in a bowl until pale and thick
- Add 500g of mascarpone until fully incorporated
- Whip the heavy cream in a different bowl until it’s stiff
- Gently fold the whipped cream into the mascarpone mix
- Next, dip a ladyfinger into the cacao mix
- Line the cookies in the bottom of a glass dish
- Put half of the cream mix on top of the cookies
- Line one more layer of cookies and add the rest of the cream on top
- Use a strainer to shake extra GAYA powder all over the top
- Put it in the fridge over night or at least 6 hours
