GAYAMISU

By removing the coffee, you’re letting the Theobromine in the GAYA cacao do the heavy lifting. Theobromine is a vasodilator, meaning it helps your blood flow rather than just amping up your heart rate.

Ingredients

  • 4 tbsp GAYA
  • 300ml Hot water
  • 500g Mascarpone
  • 300ml Heavy cream
  • 80g White or coconut sugar
  • 4 Egg yolks
  • 1 Pack of Ladyfingers

Instructions:

  1. Mix 4 tbsp of GAYA and 300ml hot water in a bowl. Whisk or use a frother until dissolved and then set it aside to cool down
  2. Whisk 4 egg yolks and 80g of sugar in a bowl until pale and thick
  3. Add 500g of mascarpone until fully incorporated
  4. Whip the heavy cream in a different bowl until it’s stiff
  5. Gently fold the whipped cream into the mascarpone mix
  6. Next, dip a ladyfinger into the cacao mix
  7. Line the cookies in the bottom of a glass dish
  8. Put half of the cream mix on top of the cookies
  9. Line one more layer of cookies and add the rest of the cream on top
  10. Use a strainer to shake extra GAYA powder all over the top
  11. Put it in the fridge over night or at least 6 hours
